About Comensoli
The Comensoli family immigrated from Italy to BC in 1956. By 1960 Mr. Comensoli (aka Nonno) made an agreement with another Italian immigrant landowner in the Port Coquitlam area to help rezone hundreds of acres from farm to commercial/industrial development in exchange for a good price on a quality lot. This Industrial area is now known as the “Broadway corridor” stretching from Kingsway St. to the Fraser River and is or has been home to company’s such as: Sysco Food Service, Nestle, Saputo, English Bay Cookies, Northern Gold, Nutri-Nation, INNO Foods, Fit Foods, H-Mart Commissary, Lilydale, Duso’s Pasta, Gutenull Bakery and of course Comensoli Foods.
Mr. Comensoli (Nonno) was a forward thinking inventor. His two primary inventions were the “Natural Frequency Conveyor” used in precious mineral mining and the “Non-Impact Pulverizer”. The pulverizer was able to not only crush the hardest of material including carbite but it could also mill grain to flour in an energy efficient way. Mr. Comensoli unknowingly inspired his grandson (Derek) while discussing the invention with his passionate enthusiasm and expression of hope that his invention could potentially help less fortunate people by keeping food cost down to affordable levels especially in 3rd world countries.
Derek made it his mission to vet the capability of the Pulverizer and designated significant resources to further food related research and development. All three generations of the Comensoli men embarked on the journey together, side by side. During this process it was determined that the technology worked best with whole grains and thus was most suitable as a Gluten-Free flour milling machine. Derek’s strategy was to try a formulation that could mimic “whole wheat” blends as the goal of flavour profile. It took much time to source the many suitable GF grains, mill them to working specifications and then scientifically formulate with them as a functional flour blend. There were multiple food scientists, engineers, millwrights and a master chef involved in the process to help stay true to the flavour profile and yet have the ability to scale production of possible products such as: muffins, bread, cookies and pizza dough. These operational considerations took place several years before equipment manufacturers designed with Gluten-Free products as a consideration. Make no mistake the Comensoli Gluten-Free flour blend was engineered in order for those with gluten sensitivities could enjoy a cost effective yet premium quality branded product. To this day Comensoli Foods sees itself as the small company able to break the barrier of high cost vs high quality trade off for those with special dietary restrictions and their families too!
